Malt Crunch Cupcakes

Oh cupcakes! Even those who call them a plain old muffin with fancy topping can’t deny the basic truth – cupcakes are delicious and the creative possibilities are what makes them such a great dessert.

ENJOY LIFE – IT’S MALTTIME!

Our recipe will give you a classic cupcake with a crunchy malt twist. Feel free to get creative after you’re comfortable with the basic recipe – there’s hundreds of different toppings to make each cupcake a unique experience.

Ingredients

Muffin:

  • 2 cups (240 grams) all-purpose flour
  • 1 cup (100 grams) Malttime Malt Crunch
  • 3 teaspoons (14 grams) baking powder
  • 1/2 teaspoon (3 grams) salt
  • 3/4 cup (150 grams) sugar
  • 1 egg
  • 1 cup (240 ml) milk
  • 1/4 cup (60 ml) vegetable oil

Cupcake Frosting:

  • 1 cup (240 ml) whipped cream
  • 1/3 cup (67 grams) sugar

Instructions

The muffin part:

1.   Preheat your oven to 200 degrees Celsius
2.  Mix your flour, baking powder, salt and sugar in a large bowl
3.  Mix and stir the egg, milk and vegetable oil together
4.  Add all of the liquid to the flour mix and stir quickly and softly until all ingredients have turned into a nice batter
5.  Once the batter mixed nicely, add 3/4ths of Malttime Malt Crunch to the bowl and stir lightly
6.  Pour the batter into muffin cups and place in the oven
7.  Bake for 25 minutes until light golden brown

Cupcake frosting:

1.   Whip the cream until it’s nice and thick
2.  Mix in the sugar
3.  Optional: add small cut fruits to the mix
4.  Add all of the frosting to a pastry bag. If you don’t have one at home you can also add the frosting to a plastic bag and cut a small opening into it
5.  Squeeze the frosting through your pastry bag to decorate the cupcakes
6.  Sprinkle Malttime Malt Crunch on top of the frosting and decorate with any fruits of your choice
